Ingredients
- 1½ cups cooked cannellini or butter beans
- 2 tbsp extra virgin olive oil
- 2 medium carrots, diced
- 1 cup celery, diced
- 1 cup red onion, diced
- 3–4 cloves garlic, minced
- 2 cups chopped kale
- 8 cups vegetable or chicken stock
- 1 medium sweet potato, diced
- 1 (14.5 oz) can diced tomatoes
Instructions
- If using dry beans, soak overnight or use the quick soak method. Rinse and drain.
- In a large pot, simmer soaked beans in fresh water until tender (about 45 minutes to 1½ hours).
- In a skillet, heat olive oil over medium heat and sauté carrots, celery, red onion, garlic, bay leaves, and thyme for about 8 minutes.
- Transfer sautéed vegetables into the pot with the beans.
- Add sweet potatoes, canned tomatoes (with juice), and quinoa. Bring to a boil then reduce to simmer for 20 minutes.
- Stir in chopped kale and cook for an additional 5–8 minutes until wilted.
- Serve hot with grated Parmesan cheese if desired.
