  • 1½ cups cooked cannellini or butter beans
  • 2 tbsp extra virgin olive oil
  • 2 medium carrots, diced
  • 1 cup celery, diced
  • 1 cup red onion, diced
  • 34 cloves garlic, minced
  • 2 cups chopped kale
  • 8 cups vegetable or chicken stock
  • 1 medium sweet potato, diced
  • 1 (14.5 oz) can diced tomatoes

Instructions

  1. If using dry beans, soak overnight or use the quick soak method. Rinse and drain.
  2. In a large pot, simmer soaked beans in fresh water until tender (about 45 minutes to 1½ hours).
  3. In a skillet, heat olive oil over medium heat and sauté carrots, celery, red onion, garlic, bay leaves, and thyme for about 8 minutes.
  4. Transfer sautéed vegetables into the pot with the beans.
  5. Add sweet potatoes, canned tomatoes (with juice), and quinoa. Bring to a boil then reduce to simmer for 20 minutes.
  6. Stir in chopped kale and cook for an additional 5–8 minutes until wilted.
  7. Serve hot with grated Parmesan cheese if desired.
