  • 2 1/2 cups low-sodium chicken broth

  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • Juice from 1/2 small lime
  • Salt and freshly ground black pepper, to taste
  • 2 (15 oz) cans great northern beans
  • 1 cup sour cream or plain Greek yogurt
  • 1 cup corn (frozen or fresh)
  • 2 heaping cups cooked chicken, shredded
  • Fresh cilantro
  • Shredded cheese
  • Tortilla chips
  • Sliced green onions
  • Sliced avocado

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sauté chopped onion for 3–5 minutes; add minced garlic and cook for 30 seconds.
  2. Pour in chicken broth and diced green chilies. Add spices (cumin, cayenne pepper, oregano, paprika), lime juice, salt, and pepper.
  3. Rinse beans; optionally puree some with broth for creaminess.
  4. Stir both pureed and whole beans into the pot along with corn. Simmer uncovered for 15–30 minutes until heated through.
  5. Remove from heat; stir in sour cream and shredded chicken until combined.
  6. Serve garnished with cilantro, cheese, avocado slices, and tortilla chips.
