Ingredients
- 1 pound ground beef
- 1 small onion (chopped)
- 1 package taco seasoning
- ½ cup water
- 1 can black beans (15 ounces, drained and rinsed)
- 1 can diced tomatoes with green chiles (10 ounces)
- ½ cup sour cream
- 1 bag Fritos corn chips (9.25 ounces)
- 2 cups Mexican-style shredded cheese
Instructions
- Preheat oven to 350°F and spray a 13×9 baking dish with nonstick cooking spray.
- In a large skillet over medium heat, brown ground beef until nearly cooked through; add onions and cook until soft.
- Stir in taco seasoning and water; bring to a boil and then reduce heat.
- Add black beans, diced tomatoes, and sour cream; mix well and cook for about 8–10 minutes.
- Layer Fritos on the bottom of the baking dish, top with cheese, half of the beef mixture, another layer of chips, remaining beef mixture, and finish with more cheese.
- Cover with foil and bake for 15 minutes; remove foil and bake an additional 5 minutes until cheese is melted.
