  • 1 pound ground beef
  • 1 small onion (chopped)
  • 1 package taco seasoning
  • ½ cup water
  • 1 can black beans (15 ounces, drained and rinsed)
  • 1 can diced tomatoes with green chiles (10 ounces)
  • ½ cup sour cream
  • 1 bag Fritos corn chips (9.25 ounces)
  • 2 cups Mexican-style shredded cheese

Instructions

  1. Preheat oven to 350°F and spray a 13×9 baking dish with nonstick cooking spray.
  2. In a large skillet over medium heat, brown ground beef until nearly cooked through; add onions and cook until soft.
  3. Stir in taco seasoning and water; bring to a boil and then reduce heat.
  4. Add black beans, diced tomatoes, and sour cream; mix well and cook for about 8–10 minutes.
  5. Layer Fritos on the bottom of the baking dish, top with cheese, half of the beef mixture, another layer of chips, remaining beef mixture, and finish with more cheese.
  6. Cover with foil and bake for 15 minutes; remove foil and bake an additional 5 minutes until cheese is melted.
