  • 1 cup mushrooms (sliced)
  • 1 cup broccoli florets
  • 3/4 cup bell peppers (sliced)
  • 1 cup snow peas (trimmed)
  • 1/2 cup water chestnuts (sliced)
  • 3/4 cup baby corn (sliced)
  • 2 teaspoons garlic (minced)
  • 1 teaspoon ginger (minced)
  • 1/4 cup vegetable broth
  • 1/4 cup soy sauce
  • 3 tablespoons honey
  • 2 teaspoons cornstarch

Instructions

  1. Heat oil in a large pan over medium-high heat. Add carrots and mushrooms; cook for 4-6 minutes until tender.
  2. Add broccoli, bell peppers, snow peas, water chestnuts, and baby corn to the pan with 2 tablespoons of water. Cook for an additional 3-5 minutes.
  3. Stir in garlic and ginger; season with salt and pepper. Cook for another 30 seconds.
  4. In a bowl, whisk together vegetable broth, soy sauce, and honey; pour over vegetables in the pan.
  5. Combine cornstarch with one tablespoon cold water until smooth; add to the pan and bring to a boil for one minute to thicken.
