  • 3 Yukon gold potatoes (peeled and chopped)
  • 1 cup chopped green beans (fresh or frozen)
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • 1 cup frozen corn
  • 1 cup frozen peas

Instructions

  1. In a large pot over medium-high heat, add olive oil, chopped carrots, celery, and onion. Sauté for about 5 minutes until softened.
