  • 46 gluten-free tortillas
  • 1 medium onion (diced)
  • 3 cloves garlic (minced)
  • 1 large eggplant (cubed)
  • 6 oz fresh spinach (chopped)
  • 45 tbsp red wine or vegetable broth
  • 1 batch of vegan cheese sauce

Instructions

  1. Heat oil in a skillet over medium heat. Sauté the onion until translucent.
  2. Add eggplant and garlic; cook with balsamic vinegar, soy sauce, red wine, and spices until tender.
  3. Stir in chopped spinach until wilted.
  4. In another skillet, layer one tortilla with the filling and vegan cheese sauce; top with another tortilla. Cook until golden brown on both sides.
  5. Repeat with remaining tortillas and serve warm.
