Ingredients
- 4–6 gluten-free tortillas
- 1 medium onion (diced)
- 3 cloves garlic (minced)
- 1 large eggplant (cubed)
- 6 oz fresh spinach (chopped)
- 4–5 tbsp red wine or vegetable broth
- 1 batch of vegan cheese sauce
Instructions
- Heat oil in a skillet over medium heat. Sauté the onion until translucent.
- Add eggplant and garlic; cook with balsamic vinegar, soy sauce, red wine, and spices until tender.
- Stir in chopped spinach until wilted.
- In another skillet, layer one tortilla with the filling and vegan cheese sauce; top with another tortilla. Cook until golden brown on both sides.
