  • 4 salmon fillets
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 2 cloves garlic
  • 34 sun-dried tomatoes
  • ½ cup dry white wine
  • 1 cup heavy cream
  • ½ cup Parmesan cheese
  • 1 cup fresh spinach
  • Salt and pepper

Instructions

  1. Pat the salmon dry, season with salt and pepper. In a frying pan over medium-high heat, melt the butter and olive oil. Sear salmon skin-side up for about 6-7 minutes until golden, then remove from the pan.
  2. In the same pan, sauté minced garlic and sliced sun-dried tomatoes for 30 seconds on low heat. Add white wine and simmer for about 5 minutes until reduced by half.
  3. Stir in heavy cream and grated Parmesan cheese until combined. Add fresh spinach and seared salmon back into the pan. Simmer for another 5 minutes, adjusting seasoning if needed.
