Ingredients
- 4 salmon fillets
- 1 tbsp butter
- 1 tbsp olive oil
- 2 cloves garlic
- 3–4 sun-dried tomatoes
- ½ cup dry white wine
- 1 cup heavy cream
- ½ cup Parmesan cheese
- 1 cup fresh spinach
- Salt and pepper
Instructions
- Pat the salmon dry, season with salt and pepper. In a frying pan over medium-high heat, melt the butter and olive oil. Sear salmon skin-side up for about 6-7 minutes until golden, then remove from the pan.
- In the same pan, sauté minced garlic and sliced sun-dried tomatoes for 30 seconds on low heat. Add white wine and simmer for about 5 minutes until reduced by half.
- Stir in heavy cream and grated Parmesan cheese until combined. Add fresh spinach and seared salmon back into the pan. Simmer for another 5 minutes, adjusting seasoning if needed.
