  • 10 oz cherry tomatoes
  • 8 oz mozzarella pearls
  • 1 cup chopped spinach
  • 1/4 cup chopped basil
  • 1/2 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 34 garlic cloves minced
  • 3/4 teaspoon Italian seasoning
  • 1/2 teaspoon salt and pepper

Instructions

  1. Cook the tortellini in salted boiling water according to package instructions until al dente. Drain using a strainer.
  2. While the tortellini cooks, chop spinach, tomatoes, mozzarella, basil, and garlic.
  3. Rinse the cooked tortellini under cold water to cool it down quickly.
  4. In a mixing bowl, combine cooled tortellini with spinach, tomatoes, mozzarella, basil, and garlic.
  5. Whisk together olive oil, balsamic vinegar, Italian seasoning, salt, and pepper in a separate bowl; pour over the salad mixture.
