  • 113 g unsalted butter
  • 200 g dark chocolate
  • 100 g brown sugar
  • 50 g granulated sugar
  • 3 eggs
  • 90 g all-purpose flour (sifted)
  • 250 g mascarpone cheese (room temperature)
  • 240 ml heavy cream
  • 50 g sugar
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract
  • 2 tbsp espresso powder
  • Cocoa powder for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8 or 9-inch square baking tin with parchment paper.
  2. In a microwave-safe bowl, melt the butter and dark chocolate together in intervals, stirring until smooth.
  3. Mix in both sugars until well combined, then add the eggs one at a time, whisking thoroughly after each addition.
  4. Sift in flour and salt; fold gently until just combined.
  5. Pour the batter into the prepared tin and bake for 25-30 minutes. Once done, poke holes in the brownies and pour espresso over them while warm.
  6. Allow cooling completely before topping with mascarpone mixture made by whipping together mascarpone, heavy cream, sugar, salt, vanilla extract, and espresso powder.
