Ingredients
- 113 g unsalted butter
- 200 g dark chocolate
- 100 g brown sugar
- 50 g granulated sugar
- 3 eggs
- 90 g all-purpose flour (sifted)
- 250 g mascarpone cheese (room temperature)
- 240 ml heavy cream
- 50 g sugar
- 1/4 tsp salt
- 1/2 tsp vanilla extract
- 2 tbsp espresso powder
- Cocoa powder for dusting
Instructions
- Preheat your oven to 350°F (175°C) and line an 8 or 9-inch square baking tin with parchment paper.
- In a microwave-safe bowl, melt the butter and dark chocolate together in intervals, stirring until smooth.
- Mix in both sugars until well combined, then add the eggs one at a time, whisking thoroughly after each addition.
- Sift in flour and salt; fold gently until just combined.
- Pour the batter into the prepared tin and bake for 25-30 minutes. Once done, poke holes in the brownies and pour espresso over them while warm.
- Allow cooling completely before topping with mascarpone mixture made by whipping together mascarpone, heavy cream, sugar, salt, vanilla extract, and espresso powder.
