  • 2 (5oz) cans drained tuna
  • 1 medium onion, chopped
  • 1/2 stalk celery, chopped
  • 1 clove garlic, minced
  • 1 tablespoon parsley, chopped
  • 34 tablespoons mayonnaise
  • 3 tablespoons extra virgin olive oil, divided
  • 1/3 cup shredded mozzarella cheese
  • Sliced bread
  • Softened butter
  • Salt and pepper to taste

Instructions

  1. In a medium bowl, combine drained tuna, chopped onion, celery, parsley, minced garlic, mayonnaise, olive oil, mozzarella cheese, salt, and pepper. Mix well.
  2. Heat a non-stick skillet over medium heat and add 1 tablespoon of olive oil.
  3. Butter one side of a slice of bread and place it butter-side down in the skillet.
  4. Spoon about 2 tablespoons of the tuna salad onto the bread.
  5. Butter another slice of bread on one side and place it on top of the tuna salad (buttered side up).
  6. Grill until golden brown on one side; flip carefully and grill the other side until toasted.
