  • 2 medium potatoes, peeled and cubed
  • 1 Tbsp olive oil
  • 1 Tbsp tomato paste
  • 1/3 cup white wine
  • 1 sprig rosemary (or equivalent dried)
  • 2 cups vegetable broth or hot water
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, sauté onion, carrot, and celery in olive oil until softened (about 5 minutes).
  2. Stir in garlic, beans, tomato paste, potatoes, rosemary, and paprika; cook for an additional minute.
  3. Deglaze with white wine and let simmer until most of the wine evaporates (about 1 minute).
  4. Add spinach and broth; season with salt and pepper. Bring to boil then reduce heat to simmer for about 15 minutes.
  5. Once the potatoes are soft and the soup thickens slightly, adjust seasoning if necessary.
  6. Serve hot with a drizzle of olive oil.
