Ingredients
- 2 chicken breasts, cubed
- 2 carrots, cut into bite-sized pieces
- 2 medium potatoes, diced
- 1/2 yellow onion, diced
- 2 cans coconut milk
- 1/4 cup + 2 Tbsp. peanut butter
- 5 Tbsp. brown sugar
- 4 tsp. soy sauce
- Juice from 1 lime
- 2 tsp. ground ginger
- 2 tsp. minced garlic
- 1 –4oz. jar red curry paste
Instructions
- Heat olive oil in a large skillet over medium-high heat. Sauté onions, carrots, and potatoes for about 4-5 minutes until softened.
- Add cubed chicken along with ground ginger, minced garlic, and red curry paste. Stir well and sauté for another couple of minutes.
- Pour in coconut milk and let the mixture simmer over medium-low heat for approximately 10 minutes until veggies are tender.
- Stir in peanut butter, brown sugar, soy sauce, and lime juice; cook for an additional 4-5 minutes until well combined.
- Serve over rice and garnish with chopped peanuts if desired.
