Ingredients

Scale
  • 1.5 pounds boneless skinless chicken thighs
  • 1 lime (juiced)
  • 3/4 teaspoon table salt
  • 3/4 teaspoon ground black pepper
  • 1 (7-ounce) container plain Greek yogurt
  • 5 cloves garlic (minced)
  • 1 tablespoon minced fresh ginger
  • 1 tablespoon ground cumin
  • 1 tablespoon smoked paprika
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground cayenne

Instructions

  1. Marinate the Chicken: Rub salt, pepper, and lime juice over the chicken thighs. In a large bowl, mix yogurt, garlic, ginger, cumin, paprika, turmeric, and cayenne until combined. Add chicken to the marinade one piece at a time to coat thoroughly. Cover and refrigerate for at least 6 hours or overnight for best results.
  2. Preheat the Oven: Position the oven rack in the center and preheat the broiler on high (or preheat to 450°F). Line a baking sheet with foil or parchment paper.
  3. Cook the Chicken: Lay marinated chicken on the baking sheet without overlapping. Broil for about 15-20 minutes until slightly charred. Flip each piece carefully and continue cooking for another 10 minutes until fully cooked.
