  • 1 onion (diced)
  • 2 teaspoons garlic powder
  • 2 teaspoons cumin
  • 2 cups water (for rice)
  • 1 cup long-grain rice
  • Romaine lettuce (chopped)
  • Canned corn
  • Canned black beans
  • Avocado (for garnish)

Instructions

  1. In a large skillet over medium heat, cook the ground turkey until browned. Add onion and garlic; sauté until translucent.
  2. Stir in garlic powder, cumin, salt, tomato sauce, and water. Simmer for about 10 minutes.
  3. Meanwhile, in a pot or rice cooker, boil 2 cups of water. Add rice and salt; cover and reduce heat to low until cooked.
  4. Once the rice is ready, mix in vegan butter, cilantro, and lime juice.
  5. To serve, layer cilantro lime rice in bowls, top with turkey filling, then add chopped romaine lettuce, corn, black beans, avocado, and any other desired toppings.
