  • 1 lb ground beef
  • 1 packet taco seasoning
  • 3/4 cup water
  • 2 cups salsa
  • 4 large flour tortillas
  • 1 can black beans (15 oz), drained and rinsed
  • 1 can corn (15 oz), drained
  • 2 cups shredded cheddar cheese
  • 2 cups shredded Monterey Jack cheese
  • 1 cup sour cream
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons sliced green onions

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  3. Stir in the taco seasoning and water, simmer for about 5 minutes until thickened.
  4. Mix in salsa and cook for an additional 2 minutes.
  5. In a separate bowl, combine black beans and corn.
  6. In a greased baking dish, layer: beef mixture, tortilla, bean mixture, cheese; repeat layers until finished with cheese on top.
  7. Cover with aluminum foil and bake for 25–30 minutes.
  8. Remove foil and bake for another 10 minutes until bubbly and golden brown.
  9. Let cool for 5 minutes before serving.
