  • 2/3 cup canned pumpkin

  • 5 tbsp melted butter, cooled
  • 1/3 cup packed brown sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp sea salt
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp pure vanilla extract
  • 1/2 to 1 tsp pumpkin pie spice, optional
  • 1 cup dark chocolate chips, divided (3/4 cup for batter, 1/4 cup for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a bread pan or line it with parchment paper.
  2. In a medium bowl, mash the ripe bananas until smooth. Whisk in the egg, then add melted butter, vanilla extract, canned pumpkin, and brown sugar; mix until well combined.
  3. In another bowl, whisk together flour, sea salt, baking soda, and baking powder. If using pumpkin pie spice, add it now.
  4. Pour the dry mixture into the wet mixture and stir gently until just combined.
  5. Fold in 3/4 cup of dark chocolate chips into the batter. Pour into the prepared pan and sprinkle remaining chocolate chips on top.
  6. Bake for 50-60 minutes or until a toothpick inserted comes out clean. Let cool before slicing.
