Ingredients

  • Sweet potatoes
  • All-purpose flour
  • Baking powder
  • Ground cinnamon
  • Canola oil (or melted butter)
  • Light brown sugar
  • Eggs
  • Sour cream
  • Chopped pecans (for topping)

Instructions

  1. Preheat your oven to 425°F (218°C). Line a baking sheet with parchment paper.
  2. Roast the sweet potatoes for 40-45 minutes until fork-tender. Let cool before peeling.
  3. Puree 1¼ cups of the sweet potato flesh in a food processor.
  4. In one bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  5. In another bowl, mix oil, sugars, eggs, sour cream, and pureed sweet potatoes until smooth.
  6. Fold dry ingredients into wet mixture until just combined; let rest.
  7. Prepare streusel topping by mixing pecans with brown sugar and melted butter.
  8. Fill muffin liners with batter and top with streusel.
  9. Bake at 375°F (190°C) for 18-22 minutes until a toothpick comes out clean.
