  • 1 cup finely diced celery (3 to 4 stalks)
  • 1 tablespoon minced garlic (4 cloves)
  • 1 tablespoon Italian seasoning
  • 1 teaspoon dried thyme
  • 11/2 cups green split peas (rinsed)
  • 8 cups reduced-sodium chicken broth
  • 1 meaty ham bone (or ham hocks)

Instructions

  1. In a large heavy-bottomed pot, heat olive oil over medium heat. Sauté onion, carrot, celery, and season with salt and pepper until softened (5–8 minutes). Add garlic, Italian seasoning, thyme, and cook for an additional minute.
  2. Stir in rinsed split peas, ham bone, and chicken broth. Bring to a boil; then reduce heat and simmer uncovered for about 60–90 minutes until peas are tender.
  3. Remove the ham bone and shred any meat to return to the pot. Blend part of the soup for creaminess if desired and adjust seasoning before serving.
