  • 1215 jumbo pasta shells
  • 2 cups ricotta cheese
  • 1 cup shredded mozzarella cheese (divided)
  • ½ cup grated Parmesan cheese
  • 1 large egg
  • 2 cups fresh spinach (or 1 cup frozen spinach)
  • 2 cups marinara sauce
  • Olive oil, garlic, Italian seasoning, salt, and pepper

Instructions

  1. Preheat oven to 375°F (190°C). Boil salted water in a large pot and cook the jumbo shells until al dente. Drain and rinse with cold water.
  2. In a mixing bowl, combine ricotta, half of the mozzarella, Parmesan, egg, spinach, garlic, salt, and pepper. Mix until well blended.
  3. Spoon filling into each shell. Spread half of the marinara sauce at the bottom of a baking dish.
  4. Place stuffed shells in the dish, pour remaining sauce on top, and sprinkle with the rest of the mozzarella.
  5. Cover with foil and bake for 20 minutes; remove foil and bake an additional 10 minutes until bubbly.
