- 12–15 jumbo pasta shells
- 2 cups ricotta cheese
- 1 cup shredded mozzarella cheese (divided)
- ½ cup grated Parmesan cheese
- 1 large egg
- 2 cups fresh spinach (or 1 cup frozen spinach)
- 2 cups marinara sauce
- Olive oil, garlic, Italian seasoning, salt, and pepper
Instructions
- Preheat oven to 375°F (190°C). Boil salted water in a large pot and cook the jumbo shells until al dente. Drain and rinse with cold water.
- In a mixing bowl, combine ricotta, half of the mozzarella, Parmesan, egg, spinach, garlic, salt, and pepper. Mix until well blended.
- Spoon filling into each shell. Spread half of the marinara sauce at the bottom of a baking dish.
- Place stuffed shells in the dish, pour remaining sauce on top, and sprinkle with the rest of the mozzarella.
- Cover with foil and bake for 20 minutes; remove foil and bake an additional 10 minutes until bubbly.
