  • 1 lb boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 small onion
  • 1 red bell pepper
  • 1 green bell pepper
  • 2 cloves garlic
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • Cajun seasoning (homemade blend)

Instructions

  1. Prepare the Cajun seasoning by mixing paprika, garlic powder, onion powder, oregano, thyme, cayenne pepper, black pepper, and salt in a bowl.
  2. Cook penne pasta in salted boiling water until al dente; drain and set aside.
  3. Heat olive oil and butter in a skillet over medium-high heat; season chicken with Cajun spices and cook until browned and cooked through; remove from skillet.
  4. In the same skillet, sauté diced onion and sliced bell peppers until softened.
  5. Add minced garlic, cook until fragrant, then stir in remaining Cajun seasoning.
  6. Pour in heavy cream; simmer until slightly thickened.
  7. Combine cooked chicken and penne with the sauce; add Parmesan cheese and mix well.
  8. Serve garnished with fresh parsley and additional Parmesan if desired.
