  • ¼ cup lime juice
  • ½ tsp chili powder
  • 4 large tortillas
  • 1 cup uncooked rice
  • 1 small red bell pepper
  • 1 jalapeño
  • 1 cup black beans (drained and rinsed)
  • ¾ cup corn kernels
  • Cotija cheese and sour cream for topping

Instructions
