  • 1/4 cup granulated sugar (56 grams)
  • 4 cups bread flour (500 grams)
  • 1½ tablespoons extra-virgin olive oil (20 grams)
  • 2 teaspoons fine salt (9 grams)

Instructions

  1. In a large mixing bowl, combine the sourdough starter, warm water, and sugar until dissolved.
  2. Stir in the flour, olive oil, and salt using a dough whisk or wooden spoon until a thick dough forms.
  3. Flour your hands and mix by hand until most flour is absorbed; cover with a damp kitchen towel and let rest for 30 to 45 minutes.
  4. Stretch and fold the dough, covering again for a rise of 4 to 12 hours at room temperature.
  5. Shape the dough into a log after gently stretching it into a rectangle; let rest for 10 minutes.
  6. Place in a greased loaf pan and allow it to rise for 1 to 2 hours until doubled in size.
  7. Preheat your oven to 375ºF and bake for about 40 minutes until golden brown.
  8. Cool on a rack before slicing.
