  • 200 grams (about ¾ cup) sourdough discard (unfed, at room temperature)
  • 1 egg (lightly beaten)
  • 1 tablespoon fresh parsley or rosemary (chopped)
  • 1 teaspoon kosher salt
  • 1 teaspoon garlic powder
  • 2 tablespoons unsalted butter (melted)
  • 7 tablespoons unsalted butter (softened)
  • 1 tablespoon fresh parsley or rosemary (chopped)

Instructions

  1. In a stand mixer bowl, combine warmed milk, yeast, and sugar. Add flour, sourdough discard, egg, chopped herbs, salt, and garlic powder. Mix on low speed while adding melted butter until a shaggy dough forms.
  2. Knead the dough on a floured surface for about 3–4 minutes until smooth and slightly tacky.
  3. Place the dough in a greased bowl and cover it to rise for 60–90 minutes until doubled in size.
  4. Prepare the topping by mixing softened butter with herbs, garlic powder, and salt.
  5. Divide the risen dough into 12 equal pieces. Flatten each piece, spread with topping mixture, fold in half, and place in a greased loaf pan.
  6. Cover and let rise for another 30–45 minutes while preheating the oven to 350℉.
  7. Bake for about 30 minutes; cover with foil for an additional 5–10 minutes until golden brown.
  8. Brush with remaining topping mixture and sprinkle with flaky sea salt before serving warm.
