  • 1 cup molasses (NOT blackstrap)
  • 1 tablespoon apple cider vinegar OR white wine vinegar
  • 2 teaspoons vanilla extract
  • 5 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
  3. Add in the egg, molasses, vinegar, and vanilla; mix until combined.
  4. In another bowl, sift the flour with baking soda, salt, and spices; gradually add to the wet mixture until just combined.
  5. Scoop rounded balls of dough onto prepared sheets with sufficient space between each cookie.
  6. Bake for 10-12 minutes until edges are firm but centers remain soft. Cool on wire racks.
