  • 1/4 cup (50g) granulated sugar
  • 1 large egg, at room temperature
  • 2 teaspoons pure vanilla extract
  • 2 cups (250g) all-purpose flour, spooned & leveled
  • 2 teaspoons cornstarch
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup (135g) white chocolate chips, plus a few extra for garnish
  • 1 cup (140g) dried cranberries, plus a few extra for garnish

Instructions

  1. Prepare the dough by creaming together softened butter, brown sugar, and granulated sugar until smooth. Beat in an egg and vanilla extract.
  2. In a separate bowl, whisk together flour, cornstarch, baking soda, and salt; gradually combine with wet ingredients until just mixed.
  3. Fold in white chocolate chips and dried cranberries before chilling the dough for at least 1 hour.
  4. Preheat the oven to 350°F (177°C) and line baking sheets with parchment paper.
  5. Scoop chilled dough into balls and space them on baking sheets; bake for 11-12 minutes until lightly golden around the edges.
  6. Allow cookies to cool slightly before transferring to a wire rack.
