  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning mix
  • 1 can diced tomatoes with green chilies (14.5 oz)
  • 1 can black beans (15 oz), drained and rinsed
  • 1 can corn (15 oz), drained
  • 1 cup salsa
  • 6 small tortillas, cut into strips
  • 1 cup shredded Mexican cheese blend

Instructions

  1. In a large skillet over medium-high heat, brown the ground beef and drain any excess fat.
  2. Add diced onion to the skillet and sauté until softened (3–4 minutes). Stir in minced garlic for an additional minute.
  3. Mix in taco seasoning and diced tomatoes with their juice; remove from heat.
  4. Layer ingredients in a greased slow cooker: start with salsa, then tortilla strips, half of the beef mixture, black beans, corn, another layer of tortilla strips, remaining beef mixture, black beans, corn again, top with tortilla strips and pour remaining salsa over everything.
  5. Cover and cook on low for 4–5 hours or high for 2–3 hours.
  6. About 15 minutes before serving, sprinkle cheese on top; cover until melted.
  7. Serve garnished with cilantro and desired toppings.
