Ingredients
- 225 g rice vermicelli noodles
- 12 shrimp (peeled)
- 1 cup Chinese BBQ pork (char siu)
- 1/2 sweet bell pepper (sliced)
- 1/2 white onion (sliced)
- 1 carrot (matchsticks)
- 3 tablespoons Madras curry powder
- 3 tablespoons soy sauce
- 2 eggs
Instructions
- Soak rice vermicelli in hot water for about 2 minutes until soft; drain and cut if necessary.
- Prepare the vegetables: Grate ginger and garlic, slice bell pepper, onion, carrot, and snow peas.
- Cook eggs in a pan to make thin ribbons; set aside once cooled.
- In a bowl, mix curry sauce ingredients: Madras curry powder, soy sauce, fish sauce, sugar, sesame oil, Shaoxing wine, and water.
- Heat oil in a wok; stir-fry ginger and garlic for about one minute before adding shrimp.
- Remove shrimp; stir-fry pork with carrots and other vegetables for another few minutes.
- Add soaked noodles and curry sauce; mix well until heated through.
- Gently fold in egg ribbons and green onions before serving.
