  • 225 g rice vermicelli noodles
  • 12 shrimp (peeled)
  • 1 cup Chinese BBQ pork (char siu)
  • 1/2 sweet bell pepper (sliced)
  • 1/2 white onion (sliced)
  • 1 carrot (matchsticks)
  • 3 tablespoons Madras curry powder
  • 3 tablespoons soy sauce
  • 2 eggs

Instructions

  1. Soak rice vermicelli in hot water for about 2 minutes until soft; drain and cut if necessary.
  2. Prepare the vegetables: Grate ginger and garlic, slice bell pepper, onion, carrot, and snow peas.
  3. Cook eggs in a pan to make thin ribbons; set aside once cooled.
  4. In a bowl, mix curry sauce ingredients: Madras curry powder, soy sauce, fish sauce, sugar, sesame oil, Shaoxing wine, and water.
  5. Heat oil in a wok; stir-fry ginger and garlic for about one minute before adding shrimp.
  6. Remove shrimp; stir-fry pork with carrots and other vegetables for another few minutes.
  7. Add soaked noodles and curry sauce; mix well until heated through.
  8. Gently fold in egg ribbons and green onions before serving.
