  • 2 packs udon noodles
  • 200 g fresh beef, thinly sliced
  • 1 white onion, sliced
  • 1 tbsp garlic, minced
  • 3 tbsp dark soy sauce
  • 1 tbsp oyster sauce
  • 2 tsp fresh ground black pepper
  • Chinese cabbage (or your choice of leafy green)
  • Sesame oil and cornstarch slurry for marinating

Instructions

  1. Marinate the beef by combining garlic, sesame oil, soy sauce, oyster sauce, rice vinegar, and cornstarch in a bowl. Let it sit for 10 minutes.
  2. Cook udon noodles in boiling water for 1–2 minutes until slightly softened. Drain and set aside.
  3. Prepare the sauce by mixing dark soy sauce, oyster sauce, black pepper, water, and potato starch until smooth.
  4. Heat oil in a wok over medium heat. Stir-fry garlic and onions until soft, then add marinated beef and cook until browned.
  5. Pour in the prepared sauce and stir until thickened. Add cooked noodles and chopped cabbage; toss gently to coat.
