  • 1 pound ground beef
  • 1 small onion
  • 2 cloves garlic
  • 2 cups frozen peas, carrots, and corn
  • 4 tablespoons butter
  • ¼ cup sour cream
  • ½ cup beef broth
  • ¼ to ½ cup milk
  • Salt and pepper to taste
  • 2 tablespoons flour
  • 1 tablespoon tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon rosemary
  • ½ teaspoon thyme
  • 1 bay leaf

Instructions

  1. Preheat oven to 350°F.
  2. Boil potatoes until fork-tender, then drain and mash with butter, sour cream, milk, salt, and pepper until creamy.
  3. In a skillet, brown ground beef with diced onions and garlic; drain excess fat.
  4. Stir in frozen vegetables and cook for 5-7 minutes.
  5. Sprinkle flour over the mixture and stir in beef broth, tomato paste, Worcestershire sauce, rosemary, thyme, and bay leaf. Simmer for 10 minutes.
  6. Spread meat mixture in a greased baking dish and top with mashed potatoes.
  7. Bake for about 30 minutes until golden brown.
