Ingredients
- 1 lb large sea scallops (dry-packed)
- 1 cup heavy cream
- 3 garlic cloves, minced
- 2 tbsp unsalted butter
- 1 tsp Cajun seasoning
- Salt and pepper to taste
- Fresh parsley (for garnish)
Instructions
- Pat scallops dry and let them rest at room temperature for 15–20 minutes. Season with salt and pepper.
- Heat olive oil and 1 tbsp butter in a cast iron skillet over medium-high heat. Sear scallops for 2–3 minutes until golden brown; flip and cook for another 1–2 minutes. Remove from skillet.
- In the same skillet, reduce heat to medium and add remaining butter and garlic; sauté until fragrant.
- Deglaze the pan with white wine or seafood broth, then add heavy cream, Cajun seasoning, smoked paprika, and cayenne (if using). Simmer until thickened.
- Stir in Parmesan cheese and lemon juice; return scallops to the pan to warm through before serving. Garnish with parsley.
