  • 3 cups seafood stock
  • 2 cups whole milk (warmed)
  • 1 cup heavy cream
  • 2 tablespoons tomato paste
  • 2 bay leaves
  • 1 pound jumbo shrimp (peeled and deveined)
  • 12 ounces lump crab meat (checked for shells)
  • 1/4 cup quality dry sherry
  • 1 teaspoon Old Bay seasoning
  • 1/2 teaspoon white pepper
  • Salt to taste
  • Fresh chives (minced)
  • Fresh tarragon (chopped)
  • Crème fraîche (optional)
  • Extra shrimp for garnish

Instructions

  1. Melt butter in a Dutch oven over medium heat. Add diced onion and minced celery; sauté until softened (about 5 minutes).
  2. Stir in minced garlic and cook for 1 minute until fragrant.
  3. Sprinkle flour over the mixture, cooking and stirring for 2 minutes.
  4. Gradually whisk in warmed milk and seafood stock while stirring to prevent lumps.
  5. Mix in tomato paste, bay leaves, and Old Bay seasoning. Simmer for 5 minutes.
  6. Stir in heavy cream; simmer for an additional 5 minutes until thickened.
  7. Add shrimp and cook until pink (3–4 minutes). Gently fold in crab meat and sherry; heat through for another 2 minutes.
  8. Remove bay leaves, season to taste with salt and white pepper before serving.
