  • 8 cups thinly sliced potatoes (about 3 pounds)
  • 4 tablespoons butter
  • ½ cup diced onion
  • 1 teaspoon minced garlic
  • 6 tablespoons flour
  • 1 cup chicken broth
  • 2 cups milk
  • 1 cup grated cheddar cheese
  • Fresh thyme for garnish

Instructions

  1. Preheat the oven to 350°F and spray a 9×13 inch baking pan with nonstick spray.
  2. Slice potatoes thinly using a mandolin.
  3. In a saucepan, melt butter over medium-low heat and sauté onions and garlic until soft. Stir in flour and cook for another two minutes.
  4. Gradually whisk in chicken broth and milk until thickened; season with salt, pepper, and thyme.
  5. Stir in cheddar cheese until melted.
  6. Layer half of the potatoes in the prepared pan; season and pour half of the sauce on top. Repeat with remaining potatoes and sauce.
  7. Cover with foil and bake for 45 minutes; uncover and bake an additional 30 minutes until golden brown.
  8. Let sit for 10-15 minutes before serving.
