- 8 cups thinly sliced potatoes (about 3 pounds)
- 4 tablespoons butter
- ½ cup diced onion
- 1 teaspoon minced garlic
- 6 tablespoons flour
- 1 cup chicken broth
- 2 cups milk
- 1 cup grated cheddar cheese
- Fresh thyme for garnish
Instructions
- Preheat the oven to 350°F and spray a 9×13 inch baking pan with nonstick spray.
- Slice potatoes thinly using a mandolin.
- In a saucepan, melt butter over medium-low heat and sauté onions and garlic until soft. Stir in flour and cook for another two minutes.
- Gradually whisk in chicken broth and milk until thickened; season with salt, pepper, and thyme.
- Stir in cheddar cheese until melted.
- Layer half of the potatoes in the prepared pan; season and pour half of the sauce on top. Repeat with remaining potatoes and sauce.
- Cover with foil and bake for 45 minutes; uncover and bake an additional 30 minutes until golden brown.
