Ingredients
- 5 Tbsp butter (divided)
- 32 oz package frozen whole kernel corn (thawed)
- 1 ½ cups half and half
- 3 large eggs
- 2 Tbsp granulated sugar
- ½ tsp salt
- â…› tsp ground nutmeg
- 1 ½ cups sharp white cheddar cheese (divided)
- 1 sleeve round butter crackers (crushed and divided)
Instructions
- Preheat the oven to 325°F. Butter a 13×9-inch baking dish with 1 Tbsp butter.
- In a medium bowl, whisk together half and half, eggs, sugar, salt, and nutmeg until well blended.
- In a large bowl, combine thawed corn, half and half mixture, ¾ cup cheese, and ½ cup crushed crackers; mix well.
- Pour the mixture into the prepared baking dish and bake for about 30 minutes until set.
- Meanwhile, melt remaining butter in a small bowl, toss with remaining cracker crumbs to coat evenly.
- After initial baking time, remove from oven and sprinkle with reserved cheese and buttered cracker crumbs. Bake for an additional 20-30 minutes until golden brown.
