Ingredients

  • 2 cups whole unsalted almonds
  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • 1 teaspoon salt
  • 1 teaspoon light corn syrup
  • 8 ounces dark chocolate
  • Coarse sea salt for finishing

Instructions

  1. Preheat oven to 300°F (149°C) and line a large baking sheet with parchment paper.
  2. Toast the almonds for 15 minutes, stirring occasionally; cool and chop half.
  3. In a heavy-duty saucepan, melt butter over medium heat. Add warm water, sugar, salt, and corn syrup; stir until sugar dissolves.
  4. Attach a candy thermometer and bring the mixture to a boil without stirring.
  5. When boiling, add whole toasted almonds at about 265°F (129°C). Cook until reaching soft crack stage at 290°F (143°C).
  6. Pour into a lined jelly roll pan; cool slightly before adding melted dark chocolate and remaining chopped almonds on top.
  7. Refrigerate until set, then slice into pieces.
