- 1/4 cup water
- 1 cup sugar
- 6 tablespoons unsalted butter (cut into pieces)
- 1/2 cup heavy whipping cream (room temperature)
- 1/4 teaspoon salt
- 1 cup all-purpose flour
- 3 tablespoons sugar
- 5 tablespoons unsalted butter (cold)
- 3/4 cup sugar
- 3/4 cup unsalted butter (room temperature)
- 1/4 cup light corn syrup
- 1 large egg
- 1 cup all-purpose flour
- 2/3 cup evaporated milk
Instructions
- Prepare the salted caramel: Combine water and sugar in a saucepan over medium-high heat until boiling. Stop stirring and cook until the thermometer reads 370 F. Remove from heat, add butter, then cream and salt. Cool.
- Create the bar base: Mix base ingredients in a bowl until crumbly; press into a greased 8”x8” pan. Pour cooled caramel over the crust.
- Make the filling: Beat together room-temperature butter and sugar in another bowl. Add corn syrup and egg, mix well, then alternate adding flour and evaporated milk. Spread over the caramel.
- Bake: Preheat oven to 350 F, bake for about 35 minutes until edges are brown but center jiggles slightly. Cool before slicing.
