  • 4 salmon fillets (7 oz each)
  • 2 tbsp butter
  • 2 garlic cloves (minced)
  • 1 shallot (chopped)
  • 1/4 cup white wine
  • 3 oz cream cheese
  • 5 oz fresh baby spinach
  • 2 tbsp plain bread crumbs
  • 1/4 cup shredded parmesan cheese
  • 1 lb puff pastry
  • 1 egg (for egg wash)

Instructions

  1. Sauté butter in a pan over medium heat. Add shallots and garlic; cook until translucent. Pour in white wine and reduce for about 5 minutes. Stir in cream cheese, then add spinach, bread crumbs, and parmesan until the spinach is wilted.
  2. Roll out puff pastry on a floured surface and cut into four pieces.
  3. Season each salmon fillet with salt and pepper; place one on each pastry piece. Spread the spinach mixture over the salmon.
  4. Fold the pastry edges over the salmon and seal with an egg wash.
  5. Place on a parchment-lined baking sheet, make decorative slits on top, brush with egg wash, and bake at 390°F for 25-30 minutes until golden brown.
