- 1/4 cup panko bread crumbs
- 2 tablespoons tomato paste
- 1 teaspoon Worcestershire sauce
- 1 large Vidalia onion, diced
- 4 ounces sliced white mushrooms
- 3 cups beef stock
- 1 teaspoon fresh chopped thyme leaves
- 1/2 teaspoon garlic powder
- 2 1/2 tablespoons flour or cornstarch
- 1 tablespoon butter
- kosher salt and pepper (to taste)
- Chopped fresh parsley or chives
Instructions
- In a large mixing bowl, combine ground beef, panko breadcrumbs, tomato paste, Worcestershire sauce, and seasonings. Form into four oval patties.
- Heat olive oil in a cast iron skillet over medium heat and cook patties for 2–3 minutes on each side until browned. Remove and keep warm.
- In the same skillet, sauté onions until translucent, then add mushrooms. Stir in thyme and garlic powder; cook for an additional minute.
- Gradually add beef stock while scraping up brown bits from the pan. Bring to a boil, then reduce heat and stir in butter until melted.
- Return patties to the skillet and simmer in gravy for about 5–7 minutes until cooked through.
