Ingredients

  • 3 white onions
  • 5 cloves garlic
  • 3 mixed peppers
  • 500g sweet potatoes
  • 6 salad tomatoes
  • 500g carrots
  • Fresh rosemary
  • Dried sage
  • Italian herbs
  • 100ml single cream
  • 800ml vegetable stock
  • Extra virgin olive oil
  • Salt
  • Pepper

Instructions

  1. Preheat your oven to 200°C (390°F).
  2. In a large baking tray, combine chopped onions, garlic (skin on), peppers, sweet potatoes, tomatoes, and carrots. Drizzle with olive oil and season with salt, pepper, and half of the rosemary. Toss well.
  3. Roast the vegetables for 30-35 minutes until tender and slightly charred.
  4. Transfer roasted vegetables to a large pot; add remaining rosemary, vegetable stock, sage, and Italian herbs. Bring to boil then simmer for 10 minutes.
  5. Remove from heat and blend until smooth using an immersion blender. Stir in single cream; adjust seasoning if needed.
  6. Serve warm and enjoy.
