- 1 1/2 cups Arborio rice
- 12 oz cremini or button mushrooms, sliced
- 1 tbsp olive oil
- 1 tbsp unsalted butter
- 1 medium yellow onion, finely chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth, warmed
- 1/2 cup dry white wine
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Heat olive oil and 1 tablespoon butter in a large skillet over medium heat. Sauté sliced mushrooms until golden brown and set aside.
- In the same skillet, cook chopped onion until translucent. Add minced garlic and sauté for another minute.
- Stir in Arborio rice and toast until edges are translucent.
- Pour in white wine, stirring until mostly absorbed.
- Gradually add warm vegetable broth one ladle at a time, stirring frequently until absorbed before adding more. Cook until creamy and al dente (about 18–20 minutes).
- Mix in sautéed mushrooms, remaining butter, Parmesan cheese, salt, and pepper. Cook for an additional two minutes.
- Serve immediately with extra Parmesan and parsley if desired.
