  • 1 1/2 cups Arborio rice
  • 12 oz cremini or button mushrooms, sliced
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth, warmed
  • 1/2 cup dry white wine
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat olive oil and 1 tablespoon butter in a large skillet over medium heat. Sauté sliced mushrooms until golden brown and set aside.
  2. In the same skillet, cook chopped onion until translucent. Add minced garlic and sauté for another minute.
  3. Stir in Arborio rice and toast until edges are translucent.
  4. Pour in white wine, stirring until mostly absorbed.
  5. Gradually add warm vegetable broth one ladle at a time, stirring frequently until absorbed before adding more. Cook until creamy and al dente (about 18–20 minutes).
  6. Mix in sautéed mushrooms, remaining butter, Parmesan cheese, salt, and pepper. Cook for an additional two minutes.
  7. Serve immediately with extra Parmesan and parsley if desired.
