  • 1 ¼ cups buttermilk
  • ¼ cup vegetable oil
  • 1 can shredded coconut
  • ⅔ cup chopped toasted pecans
  • For the frosting: 1 package cream cheese
  • ½ cup butter
  • 1 package powdered sugar
  • 2 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F. Grease three cake pans.
  2. In a mixing bowl, combine the white cake mix, eggs, buttermilk, and vegetable oil. Mix with an electric mixer for about 2 minutes.
  3. Stir in chopped pecans and shredded coconut until well incorporated.
  4. Divide the batter evenly among the three pans and bake for 15-17 minutes or until a toothpick inserted comes out clean.
  5. Let the cakes cool in the pans for about 10 minutes before transferring to wire racks.
  6. For optional flavor enhancement, drizzle rum over each layer after cooling.
  7. Prepare frosting by beating together cream cheese and butter until smooth; gradually add powdered sugar and vanilla extract until fluffy.
  8. Frost between layers and on top/sides of the cooled cakes. Chill for at least two hours before serving.
