  • 2 tbsp unsalted butter, softened
  • 1 cup powdered sugar
  • 1/2 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together softened butter and sugars until light and fluffy.
  3. Add pumpkin puree, egg yolk, and vanilla extract; mix until well combined.
  4. In another bowl, whisk together flour, baking powder, salt, and spices.
  5. Gradually add dry ingredients to wet mixture; stir until just combined.
  6. Scoop dough onto prepared baking sheets and bake for 10–12 minutes until edges are set.
  7. Cool on baking sheets before transferring to a wire rack.
  8. For frosting, beat together cream cheese and butter; add powdered sugar and vanilla until smooth.
  9. Frost cooled cookies generously before serving.
