  • 15 oz can pure pumpkin
  • 2 Tbsp flour (for streusel)
  • 2 Tbsp brown sugar (for streusel)
  • 1 tsp granulated sugar (for streusel)
  • 1/4 tsp cinnamon (for streusel)
  • 1.5 Tbsp cold butter (for streusel)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a muffin pan with cupcake liners.
  2. In a mixing bowl, combine the carrot cake mix and pure pumpkin until smooth.
  3. In another bowl, mix flour, brown sugar, granulated sugar, and cinnamon for the streusel. Cut in cold butter until crumbly.
  4. Fill each muffin liner two-thirds full with batter and top generously with streusel.
  5. Bake for about 20 minutes or until a toothpick comes out clean.
  6. Cool in the pan for 5 minutes before transferring to wire racks.
