- 50g tepid water
- 100g active starter
- 300g water
- 100g canned pumpkin purée
- 3 tbsp honey or maple syrup
- 1 tbsp pumpkin spice
- 2 tsp ground turmeric
- 12g sea salt
- 500g white bread flour
- 3 tbsp olive oil (for the bowl)
- 3 tbsp olive or vegetable oil (for the kitchen string)
- Rice flour or gluten-free flour (for dusting)
Instructions
- Prepare the starter by mixing mature starter, flour, and tepid water in a bowl. Let it sit until bubbly (about an hour).
- Combine the active starter with remaining ingredients to form a sticky dough.
- Knead the dough on a floured surface for about 10 minutes until smooth.
- Place the dough in an oiled bowl, cover, and let rise until doubled (approximately 4 hours).
- Shape the dough into a pumpkin-like loaf and let it rise again until puffy (1-2 hours).
- Preheat the oven to 450°F (230°C) and bake for about 45 minutes until golden brown.
