  • 2 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 heaping tsp pumpkin pie spice

Instructions

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together softened butter, margarine, and granulated sugar.
  3. Add egg, pumpkin puree, corn syrup, and vanilla; mix until smooth.
  4. Combine flour, baking soda, salt, and pumpkin pie spice; mix into the wet ingredients until a dough forms.
  5. Roll dough into balls (about 2½ tablespoons each) and coat in cinnamon-sugar mixture.
  6. Place on baking sheet and bake for 11-13 minutes until edges are golden brown.
  7. Allow cooling on the pan for five minutes before transferring to a wire rack.
