  • 1 large egg yolk
  • 1 cup pumpkin puree
  • 2 teaspoons vanilla extract
  • 2 1/4 cups old-fashioned rolled oats
  • 4 ounces cream cheese
  • 2 1/2 cups powdered sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon maple extract
  • 13 tablespoons milk

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream together browned butter, brown sugar, and granulated sugar until fluffy. Add egg yolk and vanilla; mix well.
  3. In another bowl, whisk flour, spice blend, baking soda, and salt. Gradually add to the wet mixture.
  4. Fold in pumpkin puree and oats until combined.
  5. Use a cookie scoop to drop dough onto prepared sheets and bake for about 10 minutes until edges are golden.
  6. For the filling, beat browned butter and cream cheese until creamy; gradually add powdered sugar and other ingredients until smooth.
