  • 1 1/2 cups milk
  • 1 cup pure pumpkin (not pie filling)
  • 5 large eggs
  • 1/4 cup white sugar
  • 1 tablespoon pumpkin pie spice
  • 2 teaspoons vanilla extract
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 2 tablespoons white sugar
  • 1 teaspoon pumpkin pie spice
  • 1/3 cup chopped pecans
  • 1/3 cup unsalted butter (melted)

Instructions

  1. Lightly grease a 9×13 inch glass baking pan.
  2. Cut the stale bread into cubes and place it evenly in the pan.
  3. In a large bowl, whisk together milk, pumpkin, eggs, sugar, pumpkin pie spice, and vanilla. Pour over the bread and gently stir to combine.
  4. For the streusel topping, mix flour, sugars, pumpkin pie spice, chopped pecans, and melted butter until crumbly. Sprinkle over the casserole.
  5. Bake at 350°F for 40 minutes covered with foil; then uncover and bake for an additional 15-20 minutes until golden brown.
