  • 1/4 teaspoon baking soda

  • 1 1/2 teaspoons pumpkin pie spice
  • 2 large eggs, at room temperature
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar (dark or light)
  • 1/3 cup vegetable oil
  • 1 cup canned pumpkin puree
  • 1 teaspoon vanilla
  • 8 ounces block cream cheese, at room temperature
  • 1/2 cup granulated sugar
  • 1 large egg, at room temperature
  • 1/2 teaspoon vanilla
  • 1/4 cup all-purpose flour

Instructions

  1. Preheat your oven to 325°F (165°C) and grease a 9” x 5” loaf pan.
  2. In a bowl, combine flour, baking powder, baking soda, salt, and pumpkin pie spice. In another bowl, beat eggs with granulated and brown sugars until fluffy. Mix in oil, pumpkin puree, and vanilla. Gradually add dry ingredients to the wet mixture until just combined.
  3. In a separate bowl, beat cream cheese with sugar until smooth; add egg, vanilla, and flour until well blended.
  4. Pour half of the pumpkin batter into the prepared pan. Spoon half of the cream cheese mixture over it; repeat layers and swirl gently with a knife.
  5. Bake for about 1 hour 15 minutes or until a toothpick comes out clean. Cool for at least 20 minutes before transferring to a wire rack.
