Ingredients
- 1.3 lbs ground turkey (extra lean)
- 6 small links (9oz chicken maple sausage)
- 1 sweet onion (chopped)
- 3 cloves garlic (minced)
- 1 yellow bell pepper (diced)
- 1 orange bell pepper (diced)
- 1 can cannellini beans (drained and rinsed)
- 1 can red kidney beans
- 1 can pumpkin purée
- 1 can diced tomatoes
- 12 fl. oz pumpkin beer
- ½ cup chicken broth
- 2 tbsp chili powder
- 1 tsp oregano
- 1 tsp cumin
- 2 tsp brown sugar
- ½ tsp cayenne pepper (optional)
- 4 Tbsp olive oil
- Sea salt and pepper to taste
- Sour cream
- Grated cheddar cheese
- Sliced green onions
Instructions
- Slice sausages and reserve with ground turkey.
- In a heavy-bottomed pot, heat olive oil and sauté garlic and onion until translucent. Add diced bell peppers and cook for another 5 minutes.
- Brown ground turkey and sausage in the same pot for about 10 minutes, seasoning with salt and pepper.
- Mix in sautéed vegetables, diced tomatoes, pumpkin purée, beans, pumpkin beer, chicken broth, and spices; stir well.
- Reduce heat to low and let simmer for 1.5 to 2 hours while stirring occasionally.
- Serve hot in bowls topped with sour cream, cheddar cheese, and green onions.
