Instructions

  1. Bring the prime rib to room temperature by removing it from the fridge one hour before cooking. Season generously with sea salt.
  2. Preheat your oven to 500°F and adjust racks to center.
  3. Combine sea salt, black pepper, rosemary, thyme, garlic, and olive oil in a bowl.
  4. Pat the roast dry and rub the seasoning mixture all over it. Place bone-side down in a roasting pan for bone-in or on a rack for boneless.
