  • 12 flour tortillas

Instructions

  1. Parboil the quartered Yukon gold potatoes in salted water until fork-tender (10-15 minutes). Drain and mash until smooth.
  2. Mix in minced garlic, smoked paprika, cayenne pepper, and salt until well combined.
  3. Spoon about 1/2 cup of filling into each tortilla, roll tightly seam-side down.
  4. Heat oil in a fry pan over medium heat; fry flautas for 3-5 minutes per side until golden brown.
